Summer Grilling with Smithfield

We didn't have a chance to properly celebrate Father's Day, so last week we made a special shopping trip to Walmart, where we picked up these Smithfield pork spareribs along with a few other BBQ favorites. One of the things I love about most summer is the food -- especially fresh fruit and anything grilled!

Creating an "elaborate family picnic" is on our summer bucket list, so I thought this would also be the perfect opportunity to check it off our list! I was worried because it rains a lot in the afternoons and evenings this time of year, but the weather was absolutely gorgeous.
We live in an apartment and we like to take full advantage of the amenities when we can. This was our first time using one of the park grills but it definitely won't be our last. Once Ben got it heated up enough, the ribs were very easy to make! This is known as the "low and slow" method and it's super simple! 

Dry Rub Recipe
4+ hours prior to grilling, apply dry rub to your Smithfield pork spareribs. Here is my favorite sweet and savory rub:

1/2 c. brown sugar
3 tbsp paprika
1 tbsp chili powder
3 tbsp kosher salt
1 tbsp black pepper
2 tbsp garlic powder
1 tsp ground cumin

Mix well before application. Rub into ribs. Grill for desired length and smother in BBQ sauce before serving.
While Ben manned the grill, we danced to music, ate watermelon, and went swimming. We ate and then we went swimming some more. It was the perfect summer evening and I'm already dreaming up the encore!
